These delicious oat bars make for a great after school snack, quick breakfast bar in the morning or an anytime treat. Made with delicious strawberry jam and creamy peanut butter, these bars are a fun, playful take on the childhood classic PB&J sandwich, sure to be a favorite.
It’s back to school time!
School in now officially in session and maybe you’re trying to think of ways to jazz things up this year in your kid’s lunch box…or maybe even your own lunch box! These delicious PB&J Oat Bars are such a fun take on the classic and beloved PB&J sandwich. And who doesn’t love a good bar? They are easy to whip up and pack well, making them a great lunch addition! I personally love to enjoy one as a little breakfast bar in the morning with a nice cup of coffee. Sound good right? I’ll bet you have all these ingredients already sitting in your pantry so let’s make them!
What you’ll need:
- 1 cup flour
- 1 cup oats
- 1/4 tsp salt
- 3/4 tsp baking soda
- 8 tbs melted butter
- 1/2 cup brown sugar
- 1/4 cup creamy peanut butter
- 1 tsp vanilla
- 3/4 cup jam or preserves of choice (I used strawberry)
Directions for PB&J Oat Bars:

1. Preheat oven to 350 and line an 8×8 baking dish with parchment paper.
2. Spray with non-stick spray.
3. Combine the flour, oats, salt and baking soda.
4. In a separate bowl cream together butter, sugar, vanilla and peanut butter.
5. Add dry to wet ingredients until well combined.
6. Reserve 3/4 cup for topping later.
7. Dump remainder into the baking dish and with wet fingertips, press until into an even layer.
8. Bake for 10 minutes.
9. Remove from oven and carefully spread jam evenly over the crust.
10. Top with the reserved topping and return to oven for 25 minutes.
11. Allow the bars to cool and place into fridge for 15 minutes to set.
12. Once set, pull both side of the parchment paper to remove bars onto a cutting board.
13. Cut evenly into bars or squares and enjoy!
For best results to pack these Delicious PB&J Oat Bars in your lunch: Chill in the fridge overnight and wrap in wax or parchment paper. To store, place bars in an airtight resealable container. Enjoy for up to a week! Follow here for more weekly recipes like this!

Notes
Gluten free option: Replace flour with King Arthur's Gluten free flour and replace oats with gluten free oats.
