Is it Fall yet?
Ok it’s mid September here in Idaho. Kids are back in school and the Christmas decorations are already out at Costco which means it’s fall, y’all! Light up your maple apple cinnamon pumpkin caramel waffle candle and put on an episode of Gilmore Girls. Out with hot girl summer; it’s time for Cozy Girl Autumn and this super easy peach crumble is so incredibly delicious.
Can I use Nectarines?
Yes! I use peaches and nectarines interchangeably because they are so similar and near the end of summer we always get a ton! Friends and family have been so generous sharing fresh peaches and nectarines from their trees and I don’t want one to go to waste. This is a great way to use up some of those really ripe peaches before they go bad. You can always peel and slice them ahead of time and throw them in a freezer bag until you’re ready to use them. I do that often! This is a very basic crumble recipe and it’s actually a spin off of the base for my PB&J Oat Bar recipe but with a few small tweaks.

You will need:
- 1 cup flour
- 1 cup oats
- 1/4 tsp salt
- 1 tsp baking soda
- 1 stick melted unsalted butter (8 tbs)
- 1/2 cup brown sugar
- 1 tsp vanilla
- 4-6 cups of thinly sliced peeled peaches (or nectarines)
- 1/2 cup white sugar
- 1 tbs lemon juice
- 2 tsp pie spice (pumpkin or apple will do)
Directions:
- Preheat oven to 350 degrees and spray a round pie dish with oil (I use avocado oil with my misto oil sprayer) You may also use an 8×8 baking dish.
- Combine flour, oats, salt and baking soda
- In a separate bowl combine melted butter, brown sugar, and vanilla
- Add wet ingredients into dry and combine well with a silicone spatula
- Reserve about 3/4 cup for crumble topping later
- Dump the rest of the ingredients into the pie dish and with wet fingers, press the mixture out until evenly covering the bottom of the dish.
- Bake for 12 minutes
- While the crust is baking, take a large bowl and mix together the sliced peaches, sugar, pie spice and lemon juice until incorporated.
- Once the crust has baked for 12 minutes, remove from oven and add the peach mixture into the pie dish. Crumble the reserved topping evenly over the top of the peaches.
- Bake an additional 25-30 minutes or until the topping starts to turn golden.
- Serve hot and enjoy! I recommend eating this on your backyard patio with a scoop of vanilla ice cream and an espresso.
