I have three little ones, ages 1 to 5 and sometimes they can be very picky. When I say they liked these baked oat bites, I mean they DEVOURED them in a matter of minutes. Not to mention my husband and I…heh heh. If you like Aussie bites, you will love this jam filled version.
These hold their shape nicely making them great for travel. Throw a few in the diaper bag for a wholesome on-the-go snack or pack in a lunch box for a nice little meal addition. I can tell already; I’ll be making these ALOT.
INGREDIENTS:
- 1 cup oats
- 1 cup flour
- 1/2 cup brown sugar
- 8 Tbs butter, melted
- 1/4 tsp salt
- 1 tsp baking powder
- 2 eggs
- 1 tsp vanilla
- 1/2 cup strawberry preserves or jam
- 1 Tbs chia seeds
- 1 tsp cinnamon
Directions:
- Preheat oven to 350.
- Prepare a muffin pan by spraying with oil.
- In a large bowl, combine flour, oats, sugar, cinnamon, salt, baking powder, and chia seeds.
- Add in eggs, vanilla, and melted butter, mixing until well combined.
- Press the mixture into the muffin pan cups and using a spoon create a shallow divot in the middle.
- Spoon the preserves into the middle of each cup.
- Bake for 15 minutes.
- Serve warm and enjoy!
These baked oat bites store very well in an airtight container in the fridge for up to a week!
Notes:
These baked oat bites will puff up slightly giving the texture and consistency that is similar to an Aussie bite or a BoBo bar. If you’ve ever tried those, these are a copycat! The oats and chia give a nice hearty chew. You can also experiment with different add ins such as ground flax, shredded coconut, chopped nuts, chocolate chips or dried fruit. These would be delicious filled with cream cheese too! Have fun experimenting and I hope you enjoy!
