Get your pizza dough started
In this recipe, I use roughly the same recipe as I would an artisan sourdough bread loaf. And being that this is a sourdough recipe, we need to allot some time to get all the fermented goodness out of this dough.
Ingredients for sourdough pizza muffin dough:
- 3 cups all-purpose flour
- 1/2 cup starter
- 1 1/2 teaspoons salt
- 3 Tbs olive oil
- 1 2/3 cup filtered water (I avoid using tap water because of the potential chlorine levels)
Directions:
- In a large bowl, combine all ingredients and mix together well with a wet hand. Wetting you hands really helps to keep the dough from caking on your hands.
- Place a damp towel or plastic wrap over the bowl and let sit for 20 minutes.
- Stretch the dough straight up as far as it will go before it tears and fold it over itself about 3 times.
- Allow to rest for 20 minutes.
- Repeat the stretch and folds 3-5 times every 20 minutes.
- Allow to rest for 2 hours or until the dough doubles in size.
- Place covered bowl in the refrigerator overnight to complete bulk fermentation.
Can I use regular pizza dough?
Yes! You can! You can use regular pizza dough or a storebought pizza dough for this recipe. It will still be delicious but you will not have the added benefits of it being sourdough.
What are the benefits of sourdough?
Sourdough is made with a sourdough starter that contains fermented grains from wild yeast in the air and your natural environment. As it ferments your dough, it is partially “digesting” the grains, making it easier to digest than regular pizza dough. These benefits can be a wonderful thing to those who may have a gluten sensitivity. Although it makes it easier to digest, it still contains gluten and people with celiac’s still should not consume sourdough. You can find my simple (no scale needed) sourdough recipe here.
Sourdough Pizza Muffin Recipe
- Prepared sourdough pizza dough (or regular dough, if using storebought)
- Your favorite pizza toppings. (I am using mini pepperoni)
- 1 cup Mozzarella cheese
- 4 oz. cup melted butter
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- Basting brush
- Oil sprayer or cooking spray
- Muffin pan (This recipe makes 12 muffins so you can use 2 6-cup muffin tins or a 12-cup muffin tin)
- Parmesan cheese
- Marinara for dipping
- Bench scraper or large chef’s knife
Instructions:
- Preheat your oven to 425 degrees.
- Take your bench scraper and on a floured surface, divide the dough into small, 2 inch pieces.
- Place the pieces of dough into a large bowl.
- Add the shredded mozzarella, and pizza toppings.
- With your hands gently toss the ingredients altogether.
- Lightly spray your muffin pan with non-stick spray or oil.
- Take a small handful of the dough mixture and start filling the muffin cups. Be careful not to overfill the muffin cup because they will puff up quite a bit!
- In a microwave safe small bowl, melt butter and add in garlic powder and Italian seasoning.
- Brush the garlic herb butter mixture generously onto the tops of the sourdough pizza muffins.
- Bake for 20-25 minutes or until they are golden brown on the outside.
- Brush again with butter mixture while still hot.
- Top with grated parmesan cheese and serve with warm marinara sauce.
This really is a fun way to do pizza night! My whole family loves these little pull apart muffins. The only problem is…there won’t be leftovers. Save the Recipe for a great appetizer!
