These quick pickled red onions are super easy to make and delicious on just about anything! This has been a summertime staple in our house as we’re grilling more. These make a great garnish or topping for hotdogs hamburgers, steak, brats, tacos….you get the picture! If you have 5 minutes, then you have time to whip these up!

Ready in Five!
Prep these pickled red onions in just five minutes. All you need to do is heat some vinegar water and slice an onion. It’s really that simple. This is one of those garnishes that you didn’t know you needed till you make it and start putting them on everything. How did I get on without them? Tangy and slightly sweet, they add such a fresh zing to so many dinners! Especially in the summer with grilling season upon us. We’ve been enjoying them on fish tacos, burgers, dogs and bratwurst. Steak and sandwiches too!

You will need:
- A pint-sized mason jar with lid. (You can use a quart sized jar, if you want – just double the recipe)
- Saucepan for heating the water and vinegar.
- A sharp chef’s style knife for slicing the onion
- Water
- Vinegar (I used white vinegar but you may use apple cider vinegar too!)
- Sugar
- Salt
- Red onion
- garlic (optional)
INSTRUCTIONS
1. Peel and thinly slice your red onion and garlic cloves.
2. In a saucepan on the stovetop, heat water and vinegar. It doesn’t need to be boiling, just get it hot enough to dissolve the salt and sugar.
3. Add salt and sugar, stirring to dissolve.
4. Place onion and garlic in a pint-sized mason jar. (You may need to press everything down with your hands.)
5. Pour hot vinegar liquid over the onions and garlic and close tightly with a lid.
6. Give it a little shake to mix well and allow to sit for at least 30 minutes before using.
7. Store in airtight mason jar in the fridge for up to a month.
NOTES
If the pickling liquid doesn’t cover the onions completely, just top off with more vinegar.
Let the pickled red onions sit in the pickling liquid for at least 30 minutes before using to allow them to get tangy and sweet. The longer they sit in the liquid, the better they get!
Over time, the pickled red onions will become a beautiful purple color, making the liquid purple as well. This is normal.
Are There Any Health Benefits to Pickled Red Onions?
Yes! And apparently RED onions are the healthiest of the onion family. They are packed with minerals and nutrients such as B9 and folate which can improve heart health. They also contain anti-inflammatory properties not to mention they add tons of flavor, so eat up!
Hot Tip!
Reuse your pickled red onion liquid when you are all done with them! Save some time and just slice up another red onion and use the pickling liquid again. You may need to top off with a little more vinegar and water to cover the onions.
