Paying For Convenience
Ok, we can all agree that Starbucks has quite the racket going for them. And yes, we are absolutely paying for the convenience of the drive thru and for the barista to microwave your egg bites for you. $5.25 to be exact…for two egg bites. I’m just going to do a little break down for you. The recipe for these make ahead breakfast egg bites makes 16 bites total. That would be $42.00 at Starbies before tax…and coffee….aaaand tip. Now don’t get me wrong, I love me some Starbucks occasionally but dang it…this one just got to me. I went onto my handy dandy Walmart app and did the math:
- 12 eggs cost me $2.80
- 1 package of bacon $3.73
- 1 package of shredded cheese $2.22
- 1 container of cottage cheese $2.88
So $11.63 before tax for all the ingredients I used for these. Mind you, we aren’t using the entire packages for this recipe. That comes to less than 70 cents per egg bite (since we’re not using the entire packages). I’m totally not trying to knock going to Starbucks for a quick breakfast because trust me, I’ve been there, done that plenty of times. But this break-down really puts it into perspective!

The Beauty of Prepping
Whether it’s make ahead egg bites or make ahead lunch prep, you are sure to be thanking your future self. In the long run, setting aside a little time to make a few things for your convenience will definitely wind up being more of a time saver (and money saver). Walking from my bed to the kitchen and popping some egg bites in my microwave for 30 seconds seems way more convenient than getting in the car and waiting in a long drive thru line, which inevitably made me late to work anyway.
You can make these and simple or fancy as you want. Not to mention, I know exactly what ingredients went into them. This recipe is bacon and cheese but there are a million and one ways to make them. Here are a few ideas in case you want variety:
- Spinach and feta
- Chopped tomato
- Sausage
- Bell pepper and onion
- Ham and cheddar
- Sundried tomato
Make Ahead Egg Bites
You will need:
- A high powered blender. I’ve had this one for years and it’s awesome.
- A silicone muffin pan
- A cookie sheet
- Cooling rack
- Pan or skillet for the bacon
Ingredients:
- 8 eggs
- 1 cup cottage cheese (I used 4% but feel free to use lowfat!)
- 1/4 cup shredded cheese
- 6 strips of bacon
- Salt and pepper to taste



Directions:
- Preheat oven to 350 degrees
- Preheat a pan or skillet on medium and start cooking the bacon.
- While the bacon cooks, crack 8 eggs into a high powered blender.
- Add cottage cheese, cheese and salt and pepper.
- Blend on medium until smooth.
- Pour the egg mixture into the muffin pan, filling the cups not quite to the top. (Quick tip: Place a cookie sheet under your silicone muffin pan to avoid spillage.)
- Once crispy, remove bacon from skillet and drain on a paper towel.
- Chop bacon into small bits.
- Top the egg mixture filled cups with bacon and a sprinkle of cheese.
- Bake for 18 minutes.
- Allow to cool slightly before removing egg bites.
- Place egg bites on a cooling rack and allow to cool completely.
- Store in an airtight container lined with a paper towel. This will absorb extra moisture and keep them fresh longer. Store in the fridge for 4-5 days.
- To reheat, pop in the microwave for 30 seconds. Enjoy!
