Summer is coming to an end and there are talks of pumpkin flavored coffees and Fall decor at Hobby Lobby, but my end-of-August garden is still in full swing. The garden is producing tons of juicy tomatoes and fragrant basil. They are coming in faster than I can keep up, so I made this quick and easy dinner! I should mention it was also a night where I had nothing pulled out to thaw and not a lot of groceries. I whipped up some easy walnut pesto in my food processor and thought of this delicious fresh recipe. You could say it’s a bit of a twist on pizza, and who can go wrong with that? I ran out to the garden and grabbed a few tomatoes and got to work!
Here’s how I put these quick & easy pesto caprese toasts together:
- Start by slicing your sourdough bread and spreading them out on a lined large baking sheet.
- Next, evenly spread your pesto on each slice and spread out some shredded mozzarella cheese.
- Place thinly sliced tomatoes on top.
- Bake at 350 degrees for 20-25 minutes. Or bake until the cheese is melted, and the edges are crisp.
- After taking your pesto caprese toast out of the oven, drizzle olive oil and or balsamic glaze to finish.



This is such a quick and easy solution to dinner! Dip that crispy bread into some tomato basil soup on the side to bulk up your meal. Make it on a smaller scale with sliced baguette and chopped tomatoes for a fresh and easy appetizer.

Ingredients
- Sliced sourdough bread
- Pesto
- shredded mozzarella cheese
- tomatoes
- olive oil
- balsamic glaze (optional)
- fresh basil for garnish
Instructions
- Place sliced sourdough bread on large, lined baking sheet.
- Generously spread the pesto evenly onto each slice.
- Sprinkle with shredded mozzarella cheese.
- Evenly place sliced tomatoes on each slice of bread.
- Bake in the oven at 350 degrees for 20 minutes or until the cheese is melted and the edges are crisp.
- Drizzle with olive oil and balsamic glaze, and garnish with fresh basil.
- Serve immediately and enjoy!
Notes
There are so many variations you can add to this recipe so be creative with it! Add some goat cheese or a fig preserve with some bacon or prosciutto. So many possibilites!
