Simple Wholesome Ingredients
- Butter
- Organic sugar
- Raw honey
- Cinnamon
- Sourdough discard
- Organic all purpose flour
- Organic all purpose Einkorn flour (I use the Jovial brand)
I am constantly on the hunt for wholesome and healthier options for snack ideas. With three kids (7, 4, & 2), you can just imagine the snacking that ensues in my house. And it does….constantly. These little cookies are cute and fun and I love that I can use up some of my sourdough discard in these. I have only just started experimenting with the ancient grain, einkorn and after a somewhat disastrous attempt at making an all einkorn sourdough loaf, I was hesitant to use it again. But we try, try again and these sweet little treats, using very little organic sugar and raw honey, hit the spot!

You can definitely make these using any kind of cookie cutter you like but when I found these adorable animal cracker cookie cutters on Amazon…I had my inspiration! My kids love these and there are so many other varieties and shapes as well! I have made these sourdough discard animal crackers many times now with these cutters and they always turn out beautifully.
I mean….how CUTE are these?

Let’s Make Sourdough Discard Animal Crackers!
These “crackers” are really more like an animal cookie but potato, po-tah-toh. Not sure why they’re called animal crackers in the store but since we’re recreating the healthier version, we’ll go with it.
You Will Need:
- Some sort of cookie cutters
- Rolling pin
- Large baking sheet
- Parchment paper or silicone mat

Ingredients:
- 1/2 cup salted butter
- 1/4 cup sugar
- 3 Tbs honey
- 1 tsp vanilla
- 1 large egg
- 1 1/2 cup organic all purpose flour
- 1 1/2 cup organic all purpose einkorn flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt

Instructions
- In a large bowl, cream together softened butter, sugar, honey and egg.
- Add in flour, cinnamon, baking powder, salt, vanilla, and discard.
- Combine with a spatula until all ingredients begin to form a dough.
- Using your hands, knead the dough until smooth and shape into a ball.
- Place in the fridge for 15 minutes.
- Preheat oven to 350 degrees
- On a floured surface roll out the dough to about 1/4 of an inch thick.
- Using your cookie cutters, firmly cut out your animal shapes and place on a lined cookie sheet.
- Bake for 15 minutes.
- Allow to cool for an additional 15 minutes.

Notes
If you want a crunchier animal cracker, roll out the dough slightly thinner. Allowing the animal crackers to cool completely is key to get that crunchy texture. Store in an airtight container or Ziploc bag for up to a week and enjoy!
