What is sourdough discard? If you have a sourdough starter, you know that you have to discard part of it during the feeding process when you add more flour and water to your starter. If you didn’t discard part of your starter, you would end up with way too much. There are many ways to use discard and this simple and so easy sourdough discard cracker recipe is just another great way to find a use for it! This recipe uses a full cup of discard and transforms it into a delicious crunchy snack that definitely won’t go to waste.
Customize Your Sourdough Discard Crackers
There are so many flavor combinations you can use for these easy sourdough discard crackers. Today, I made a savory and a sweet version. Be creative with it! This is the fun part about cooking. Use my recipe as a guide but feel free to make it your own. The measurements for the herbs and seasonings can be interchangeable with other variations so have fun with it!

- Garlic Jalapeno (see recipe card below)
- Sweet Cinnamon-Sugar (see recipe card below)
- Garlic Rosemary
- Italian herb
- Onion and chive
- Sesame
- Everything But the Bagel
- Pumpkin Spice
Supplies you will need:
- Large baking sheet
- Parchment paper
- silicone baking mat
- Pizza cutter or large sharp knife
- Rolling Pin
Ingredients:
- 1 cup sourdough discard
- 1 cup all purpose flour
- 1/4 cup butter, softened
- 1 tsp salt
- 1 TBS herbs/seasoning/spice of choice
- 1/4 cup brown sugar (if making the sweet version)
Directions:

- Preheat your oven to 350 degrees.
- In a medium bowl, combine discard, flour, butter, salt and seasoning of choice (and sugar if making the sweet option) until it forms a dough.
- Form the dough into a round disc and place it onto your silicone mat or piece of parchment paper.
- Place a large piece of parchment paper over the top and roll the dough out as thin as possible.
- Carefully peel off the top piece of parchment paper and transfer the mat or piece of parchment paper that is under the dough, onto your large baking sheet.
- Bake for 15 minutes. Take the crackers out (they will still be a bit soft) and cut them into desired shape.
- Return to the oven and bake an additional 5-10 minutes until they are the crispness desired.
- Allow to cool completely and store in an airtight container.
These make a great addition to any cheese plate or charcuterie board!
Garlic Jalapeno Sourdough Discard Crackers
These garlic jalapeno crackers are delicious, crunchy and have just the right about of spice. Made with sourdough discard, these are a simple and easy snack to whip up in under 30 minutes. Serve as is or as an addition to any cheese plate or charcuterie board!
Ingredients
- 1 cup sourdough discard
- 1 cup all-purpose flour
- 1/4 cup butter, softened
- 1 tsp salt
- 1 TBS dehydrated jalapeno powder
- 1 tsp garlic powder
Instructions
- Preheat your oven to 350 degrees.
- In a medium bowl, combine discard, flour, butter, salt and seasonings until it forms a dough.
- Form the dough into a round disc and place it onto your silicone mat or piece of parchment paper.
- Place a large piece of parchment paper over the top and roll the dough out as thin as possible.
- Carefully peel off the top piece of parchment paper and transfer the mat or piece of parchment paper that is under the dough, onto your large baking sheet.

Cinnamon Sugar Sourdough Discard Crackers
Ingredients
- 1 cup sourdough discard
- 1 cup all-purpose flour
- 1/4 cup butter, softened
- 1/2 tsp salt
- 1 TBS cinnamon
- 1/4 cup brown sugar
- 1 tsp granulated sugar for garnish
Instructions
- Preheat your oven to 350 degrees.
- In a medium bowl, combine discard, flour, butter, salt, cinnamon and brown sugar until it forms a dough.
- Form the dough into a round disc and place it onto your silicone mat or piece of parchment paper.
- Place a large piece of parchment paper over the top and roll the dough out as thin as possible.
- Carefully peel off the top piece of parchment paper and transfer the mat or piece of parchment paper that is under the dough, onto your large baking sheet.
- Bake for 15 minutes. Take the crackers out (they will still be a bit soft) and cut them into desired shape. Sprinkle the granulated sugar over the top.
- Return to the oven and bake an additional 5-10 minutes until they are the crispness desired.
- Allow to cool completely and store in an airtight container.
